A classic grilling cut, the t-bone includes the NY strip and a sliver of tenderloin. You only get two-three of these per animal, so best enjoy it with a few beers. Aged at least 30 days and up to 75 days.
The age on these steaks means that there will most likely be a bit of funk on the meat when you take it out of the bag. This is totally normal and it's safe to eat. Pat it dry with a towel and let it sit out in the air for a few minutes to let the smell dissipate. Aged beef, like aged cheeses and wines will have a funkiness that will scare some off, but the bravehearted will reap rewards!
