A classic steakhouse cut, the sirloin steak (for those Brits and Aussies out there, not a NY strip) is the meeting of a couple of muscles - top sirloin and sirloin cap (i.e., culotte and pichana). It’s great for a quick sear to medium-rare or medium. About as tender as a classic NY strip steak, it also packs a powerful beefy flavor.
