Grass-fed, grain-finished and locally-sourced Pennsylvania beef. 

The many-named beast: NY strip, Kansas City strip, strip loin, sirloin, contre-filet. Whatever you call it, this is not a steak to miss. Aged at least 30 days and up to 75 days.

The age on these steaks means that there will most likely be a bit of funk on the meat when you take it out of the bag. This is totally normal and it's safe to eat. Pat it dry with a towel and let it sit out in the air for a few minutes to let the smell dissipate. Aged beef, like aged cheeses and wines will have a funkiness that will scare some off, but the bravehearted will reap rewards!
