[COOKING NOTES]: Knowing how to cook a whole chicken feels like some right of passage that should be celebrated. Our method is simple. Remove innards if they’re present, and tuck the wings behind the chicken and then tie the legs together. This video shows how to truss a chicken the proper way, but we say go ahead and just tie those legs together if wrapping the twine around the whole body seems like too much work. Coat your chicken with high-quality olive oil, salt, and pepper and make sure to really rub it in and under the skin. Then, put your chicken on a roasting pan and into the oven at 475° for 30 minutes. After 30 minutes turn off the oven and leave the chicken in the oven to continue cooking for another 30 minutes. The chicken should be in the oven for one hour total. When you remove it, you’ll have crispy skin and tender, juicy meat. Give the chicken 10 minutes to rest outside the oven before devouring.
