WHY WE LOVE THESE: If you ever thought that boneless skinless chicken breast was boring or flavorless, let these change your mind. This comes from free-range chickens which make for rich, flavorful meat.
FROM THE CHEF: Chicken always needs to be cooked to at least 165°F. Start by patting your chicken dry and then drizzle with olive oil and sprinkle on some salt, pepper, and paprika, sumac, or chili flakes. You can throw them on the grill to get a nice char or cook them in a pan with some of your favorite fresh herbs and a few peeled garlic cloves. Always use an internal thermometer to check for doneness.
RAISED RESPONSIBLY: Like all of our meat, this comes from farmers who raise their animals with respect. This chicken comes from Cascun farm, started by Don and Andrea Cascun in 2010. They started with just 100 chickens on a 125-acre farm in Greene, NY but quickly grew to include their own USDA inspected processing facility.
Cascun farm now partners with a community of 60 family farms in upstate NY, each of which meets the Cascun's criteria for free-range birds with outdoor access, Cornish Cross genetics, fed non-GMO grains, harvested at 6-8 weeks without antibiotics or hormones.
