WHY WE LOVE THIS: This selection of steaks will delight the steak lover. We focused on steaks that are thin, best for marinating and grilling. These are well-known, well-loved steaks, but because they're scarce on an animal, they are some really special cuts of meat- did you know that there is only one hanger steak and only four skirt steaks on an animal!?

- Let thaw in the refrigerator. For smaller pieces of meat, less than 1 lb, if you transfer to the fridge it should be ready for dinner. For larger cuts, allow at least 24 hours, sometimes more

FROM THE CHEF: Thin steaks are perfect for marinating and grillings. We love to do a simple carne asada marinade or you can use any combination of herbs, salt, and acid that you prefer for an overnight marinade. To get these steaks perfectly cooked, we recommend using this guide and taking a hot and fast approach in a pan or on the grill.
