WHY WE LOVE THIS: The Good Stuff. Our bacon is made the old-fashioned way, never injected with any nonsense, machine pressed or quick cooked like mass-produced bacon. Our fresh pork belly is hand-trimmed and then slow-cured for a week, using a recipe that dates back 66 years. It's then slow-smoked with hickory wood until the meat reaches 145 degrees. All of this means great tasting bacon that shrinks minimally when cooking.
