WHY WE LOVE THESE: These minimally-processed snack sticks are a go to treat that tests our self control. These snack sticks are a perfect meeting of our beef, Rooster Street Butcher's recipe and Burlap & Barrel's spices. It's their crushed cobanero chilis that give these sticks a mild, but present spiciness. Smokey, tangy, salty and sweet, we think we covered the bases in this one.

Ingredients: Beef, seasoning [sea salt, spices (including red and black pepper, celery), sugar, cherry juice powder, garlic), vinegar, citric acid, cobanero chili, smoked paprika, celery powder. In colored collagen casing.

BUTCHER’S LESSON: We made these snack sticks with shoulder clod hearts. A lean cut that usually goes into ground beef. If you have too much fat in a snack stick it will become overly greasy and unpleasant to eat. Good thing we know that a head of time!
