Thinly Sliced Steak for Tacos, Sandwiches, Ramen and More

To make sandwich steak, also called chip steak, we take beef shoulders (chucks) and slice them thin so that they cook very quickly. This makes for an easy-to-cook, delicious steak that can be served in tacos, Philly cheesesteaks, chooped cheese, bulgogi, ramen, literally anything to which you can add beef. 

The basics:

Marinate and season to your liking and toss these in your cooking medium of choice, preferably a nicely seasoned cast iron or skillet. Or, if you have a plancha for whatever reason, use that - also, invite me over for dinner.
