FROM THE CHEF: This steak will do well with our classic steak recipe, or change things up a bit and try the reverse sear method. No need to add a ton of special seasoning here, good old salt and pepper will do the trick.
BUTCHER’S LESSON: Chuck eye steaks come from where the ribeye muscles meet the shoulder muscles. Walking and grazing on pasture help this muscle develop deep flavor.
