WHY WE LOVE IT: Denver steak is the cool new kid on the block and one of our favorites. It’s incredibly marbled and super versatile. If you’re looking for a steak that’s affordable, delicious, and doesn’t require a culinary degree to cook perfectly- this is a winner.

FROM THE CHEF: The Denver steak is so much fun because you can treat it like a normal steak and grill it or use our reverse sear method, but you can also braise it low and slow like short ribs to make super tender, flavorful steak tacos or steak sandwiches. If you do cook it like a traditional steak, keep it on the rare side for maximum tenderness.
BUTCHER’S LESSON: The Denver steak is tucked away deep inside the shoulder (chuck) of a steer, surrounded by muscles that need very long braises because of all the work they get walking around on pasture. The Denver gets the best of both worlds- deep flavor from the surrounding large muscles but remains nice and tender.
RAISED RESPONSIBLY: Like all of our meat, this comes from farmers who raise their animals with respect. They follow strict animal-welfare guidelines. These farmers work hard every day and in return, we take care of them by paying fair and consistent prices for their animals. We think that makes sense.
