Chuck me up fam. Butchers often describe the chuck as the most complex primal. It comes from the front shoulder, which is the hardest working muscle group on the animal. Typically, hardworking muscles mean incredible, deep flavor, and tougher cuts of meat.
Yet, the chuck is also home to some of the most tender muscles you’ll find on a steer. Most notably, the infamous flatiron steak -- the second most tender cut after the tenderloin. You’ve also got chuck eye steaks, the natural extension of the ribeye muscle. Denver steaks, a beautifully marbled cut, and a personal favorite here at Happy Valley.
